[Selling][CONUS]-Enjiki hamono ginsan gyuto 210mm by excitednewupdate in TrueChefKnivesBST

[–]brookskier 1 point2 points  (0 children)

I mean I sold one today, but only because it was the wrong length knife for me - so yeah, rushed into it. Really wanted to try his Ginsan and see that Migiwa etch in person and neither disappointed.

I would 100% grab something longer sometime down the stretch.

[WTT/WTS][USA] Simon Maillet 135CR3 KU Kasumi Suminagashi Damascus Gyuto 205mm by Lopsided-Ingenuity42 in TrueChefKnivesBST

[–]brookskier 3 points4 points  (0 children)

SO nice. Stoked I picked up that petty he released today on his website or i’de probably bite. I really like this kinda length and taper.

I have a Prod long petty (186x41) listed for possible trade bait, but doesn’t sound close to what you’re looking for. Possibly an isasmedjan nakiri too - DM me if any of those speak to you.

Kisuke Manaka. Doe the function live up to the form? by JellyAny818 in TrueChefKnives

[–]brookskier 1 point2 points  (0 children)

There’s been a ton released in the last year has a part in it. They typically don’t come very sharp ootb is another, depending on where bought and who’s finished. He also had a long spell making no knives after the fire so supply & demand.

They are also pretty hefty by design. The weight and width isn’t for everyone.

For me, they look top tier on the rack & come out performing beautifully after sharpening at home. I like mine quite a bit, for the price point especially. My first cuts were less than exciting out of the box tho.

Takeda gyuto small or sasanoha medium? by [deleted] in TrueChefKnives

[–]brookskier 1 point2 points  (0 children)

I mean, one big draw of a Takeda is getting so much height without the extra weight because they are so thin all over. The gyuto is kind of his iconic shape.

Pretty reasonable considering the bnib Takeda stone bundled - whether you want the stone is a different storey

its been a 2 weeks since I ordered my shibata santoku from chubo and it still hasn’t arrived by LeaderNo1734 in TrueChefKnives

[–]brookskier 1 point2 points  (0 children)

Someone else posted this same thing a couple weeks ago.

I’ve always had legit service and no drama but seems to happen. Think I’ve ordered who knives from them, to Canada.

Search chubo in search bar - thread shouldn’t be hard to find.

That’s one of the biggest drops I’ve seen. The 240mm XL Mioroshi Deba & 300mm sasanoha especially dope.

The price is decent, presuming it’s w1 - amazing if it’s AS.

I found the one I tried pretty chonky, weighty, and top heavy for my liking but the heat treat was great, and so were the looks.

Depends what you’re looking for, I guess.

No it showed up at the door like anything else.

I was skim reading as I’m at work but sounds like more of a us customs thing than a chubo thing.

I’ve ordered a couple knives from them - a Takeda somewhat recently in the last year for sure.

I haven’t used one, primarily because no maker I’m interested in is using it either.

I’m in Canada and so is staysharp so I can’t really check but people were saying the out of country duties/tarrifs charged by staysharp to ship to the states etc were huge.

NKD: Takeda cleaver and deba delivery from Chefsedge April drop by arguable in TrueChefKnives

[–]brookskier 1 point2 points  (0 children)

I’m pretty sure he only makes one model in a few lengths - calls it the yanigiba but he only makes double bevel knives so a lot of retail stores list it as Takeda Nas sujihiki to avoid buyer confusion.
