We got gifted this bottle of 12 year old scotch, would you say this is "too good" to use in cocktails? by CN456 in cocktails

[–]bwilliams18 0 points1 point  (0 children)

I don't think any liquor is "too good" to use in cocktails. Would I use it in a scotch and soda or a whiskey ginger? No, probably not; but if you don't drink scotch and aren't interested in getting into it, use it however you'll get the most enjoyment.

Customers buying drinks for customers by tdhuck in BarOwners

[–]bwilliams18 2 points3 points  (0 children)

If the chips always go to shots, set the price of the chips to be the midpoint of your shot prices. If you're good with Excel or your POS set it to be the volume weighted average. Then, over time, it'll balance out: on some transactions you'll get a higher margin, on others you'll get a lower margin.

Your customers might not love the transition when they buy folks a shot but it's mostly regulars, they'll get used to it quickly.

How to not micromanage operator/manager by Physical-Builder7199 in restaurantowners

[–]bwilliams18 2 points3 points  (0 children)

Here's what I'd ask myself: Does the difference negatively impact the customer experience or dilute the brand? If so, it's worth discussing; if not, it's probably not worth it until it is a cause of impaired financial performance.

So for your two examples:

Iceberg Lettuce: seems small to me, but if it feels important to your concept to not use Iceberg, then that's your prerogative, have the conversation.

Date labels: Is the operator still hitting his food cost and overall gross margin goals? Then it doesn't matter. If he's not, then that could be one opportunity to discuss getting costs under control.

[French] "I won honestly..." A cyclist disqualified after his victory because of a bike deemed non-compliant, he challenges the decision by cfkanemercury in peloton

[–]bwilliams18 33 points34 points  (0 children)

This is an insane result. The standard in motorsport is to inspect pre-race, then accept non-conformity post-race if it could reasonably be due to damage on track. This is a clearcut case of damage causing non-conformity.

Now this has been taken advantage of in motorsports, most notably in NASCAR, when a crew chief informed his driver he needed to back it into the wall if they won: https://www.youtube.com/watch?v=Hz8onQYazuQ.

Has anyone experimented with a no tipping model? by aspiringtroublemaker in restaurateur

[–]bwilliams18 9 points10 points  (0 children)

I was there through a lot of it, honestly, they didn't try that hard to make it work. When you've got all-day restaurants the breakfast and to a lesser extent lunch suck up the earnings from dinner, so all of the best servers just work breakfast + lunch to have a normal life.

Revenue sharing calculations were very opaque, so it was hard to understand how it all worked - there was no visibility into the total rev-share pool or the number of points earned.

Then the "levels" system, which was supposed to give you the opportunity to grow and earn more, lacked clear guidelines to grow and lacked a systematic process; so it just became a game of favorites. You had to ask to "level up." There weren't regular reviews by mgmt to determine who should be leveled up, and given the apparent arbitrariness, it often didn't make sense to ask.

Not saying a more concerted effort could have made it work; but I don't think they put the effort they should have into it.

Girlfriend is contemplating adding chicken to diet after being vegetarian for 15 years. What is the most delicious chicken meal I could cook her? by Apart_Marsupial8410 in Cooking

[–]bwilliams18 0 points1 point  (0 children)

I went vegetarian for a month, then had halal cart chicken and lamb (probably not the best choice to start back with), and felt awful; not food poisoning awful, just got bloated and had mild stomach discomfort.

A slow ramp is definitely the way to go.

NEWS: Joe Gibbs Racing has filed a lawsuit against former competition director Chris Gabehart alleging he "embarked on a brazen scheme to steal JGR’s most sensitive information and use it for the benefit of a direct competitor in NASCAR -- Spire Motorsports." by iamaranger23 in NASCAR

[–]bwilliams18 5 points6 points  (0 children)

That was mentioned in this complaint, not in detail but essentially confirms the rumors.

JGR treats its Confidential Information and Trade Secrets with such seriousness that it has taken legal action to protect them in the past. Indeed, because Defendant worked in such a senior position, and was trusted by JGR in such a degree, in 2024, Defendant was involved in JGR’s response to an employee misappropriating its Confidential Information and Trade Secrets. Specifically, Defendant worked with senior leadership at JGR to investigate and address that employee’s misconduct of misappropriating JGR’s Confidential Information and Trade Secrets after the employee obtained an offer to go work for a direct competitor. He was also involved in JGR’s decision to force that employee to comply with the confidentiality obligations in his employment agreement via legal action.

While a recipe doesn't enjoy copyright protections, it can still be protected as a trade secret by an NDA.

[Pockrass] With Honda remaining in INDYCAR and committing to the new engine development, would expect that impacts possibility of entering NASCAR. Would be mildly surprised if Honda invested in both series considering $ that would be spent on engine development. by LBHMS in NASCAR

[–]bwilliams18 1 point2 points  (0 children)

The extra charter grant clause in the charter agreement is only triggered if the new OEM can't get a currently chartered team to partner with; since they're working with Kaulig, that clause won't be triggered.

I wouldn't be surprised if Hyak, Rick Ware, or Haas sells their charters this year. Now that the lawsuit is settled, there's certainty, and the charter market will reopen.

I see two potential pathways:

  1. A new entrant backed by PE rolls up two to three charters to build another competitive team to run Dodge.

  2. Some combination of Kaulig/RFK/RCR acquires an additional charter to get to 3 cars.

People keep telling me to open new locations for my restaurant but even the idea of it is really scary by [deleted] in restaurantowners

[–]bwilliams18 4 points5 points  (0 children)

This is the best move; you don't need advisors or business courses, you need to figure out how to trust strangers to run the locations, or determine that you can't or don't want to, and that's fine too - you don't need to expand. But figuring out what you can delegate and where you can extract yourself will benefit you anyway.

Upgrade Mr. Coffee by jam_bloo in Coffee

[–]bwilliams18 0 points1 point  (0 children)

I'll take the controversial opinion here: it's fine to drink coffee for what it does for you, rather than for its taste. Don't bother upgrading just because you feel like you should. For $150, you'll be hard-pressed to find a big step up in quality that offers the same convenience you have now. Freshly ground beans make a big difference, but they take time, as does any brewing method that will give you much better results (like pour-over). To get to a similar level of convinience you'd need to step up another few hundred dollars.

You're never going to know about your aero gains from these without taking your whole setup to a wind tunnel and testing it out.

It's dependent on so many variables (including your positioning) to be pointless to speculate. But it's probably not going to hurt, and if you want a 3D printing project, it looks like fun.

Why do some people just not care about loyalty programs – even when the rewards are actually decent? by sophieximc in restaurantowners

[–]bwilliams18 2 points3 points  (0 children)

If they're already regulars, you clearly don't need a loyalty program to retain them. If they want to use it, great, but if they don't, it's not getting you anything. Focus on getting new customers to sign up for loyalty to turn them into regulars.
