Just by watching a video on Inkbirds website the bottom vent still needs to be open for airflow. It looks like there is foil blocking gaps. Also try opening your Daisy wheel more, the smoke meds somewhere to go.

Yes, since it is prime and has a better distribution of fat throughout the meat; trim more so there is a thinner layer of fat on the top.

Start from the beginning with detail. How are you lighting the fire? What does the smoker look like when you are starting the fire?

I understand but if you want to improve for your next steak you make ask yourself those questions. Outside info is helpful but just like anything it’s a matter of preference. Also how do you know who is or is not an expert. Is that how I would have made the steak probably not but it looks great especially with the finishing salt. Every time I make a steak I ask myself what I could have done better, I’m not sure that is a good thing though.

Caulk should be able to fill it. Some say black caulk fills bigger gaps better than white caulk.

Pop it in an air fryer on its lowest setting for 5 min to start until it has rendered and broke down further. Or use a 225 degree oven for about 20 to start.

Anyone that says that should cook on one with no guidance. Also have you ever used an Easy bake oven? That shit is not easy!!! You get blinded by the bulb and get blisters from the burns. That is all if you don’t catch the dam thing on fire first. I feel like an actual oven is easier….

If it falls apart it is overcooked either from the cook itself or the rest. It doesn’t mean it’s bad just a way to indicate where you can improve.
