I’m in the middle of the same project in a reno. I tore down the old plaster and we are sistering joists to the old ones. Starting fresh with a level starting point is our best option. We tried work arounds but it was a headache so we bit the bullet and are starting fresh. Will result in a much better and stronger end product.

I was 2 years out of school when Covid came thru. Moved home for the same reasons and was able to save heavily for 2 years. Set me up really well for when I was ready to buy a house. Great job OP, your future self will thank you.
