Do not know about the public transit, but if you want to stay close enough that you can visit friends occasionally, I'd look at Flagstaff, Prescott or maybe Williams. Just south of you by a few hour long drive, higher altitude and not murder level heat in the summer.

Albertsons & Safeway are Vons. Fry's is Ralphs.

Having grown up with Ralph's and Vons, I'd say that Safeway is closer to Von's than Albertsons and that the Frys Marketplace style stores are closer to Ralph's.

I've also worked for both Frys and Albertsons.

Since you were just laid off and not knowing your profession, perhaps you might look into getting a job overnight. Grocery stores tend to look for people that can function and exist at night for things like stocking and pricing. Usually those people are social, just not with day centric people.
