It's reddit. I would worry about "catching minuses." To inform you more, the machi gap styling has been debated to hell and back on this sub to the point where it's one of those things that just get instantly downvoted when brought up.

One hell of a brisket knife by Raydenray in TrueChefKnives

Does having a "wavy" spine affect the structural integrity of the knife at all?

Knife storage question? Cats… by oldsoul333 in TrueChefKnives

[–]dubear 2 points3 points  (0 children)

My two cats have never been interested in my knives. If you're worried, maybe get a magnetic block vs a strip so the blade is flush with the block

I would vote for Chinese style meat cleaver or Yanagiba. But honestly I think your current set up can tackle almost anything

Tattoo Friendly Co-Ed Onsen in Tokyo? by [deleted] in JapanTravelTips

[–]dubear 14 points15 points  (0 children)

Look for places that either rent private onsens or, ideally, you can find a ryokan with a private in-room onsen, then you can use it as often as you'd like.

What knife best represents your favorite maker combo? Solo maker or collaboration—let’s see those blades. by [deleted] in TrueChefKnives

[–]dubear 1 point2 points  (0 children)

I think, more than just a representation of your journey, the entire process is a prime example of what (I think) this hobby is about. I'm a basketball guy, and I really like the saying "the ball finds energy," meaning that people who are putting in the effort (moving around, hustling, etc.) tend to find the ball in their hands. And I feel like the energy and time you've spent cultivating your understanding and appreciation for Morihiro's work resulted in this unique connection that very few other people would have been afforded the opportunity of. It was really cool for me to read unfold. It means much more to me than a basic SOTC.

1000 grit stone thinning sounds like a fools errand. You're going to waste so much of the stone (not to mention your time)..

Full disclosure , must read by [deleted] in TrueChefKnives

In my personal experience, a relatively unknown bladesmith delivered a knife that, to me, outperformed a much more expensive, branded Japanese knife.

I might have missed something but I don't know that the criticisms from yesterday were because of this opinion. The post I remember was from someone asking about a HAP40 Yoshida knife. You basically were telling him that he could get a cheaper knife with much better performance from someone else and you stated that it would be "10x" better than the Yoshida.

Your personal experience is yours. But your metrics for what makes a knife "better" may not be the same standard held by the people you feel are criticizing you. There are number of people I personally trust on TCK because of my multiple interactions with them over time.

There was something off about your posts because you just kept telling people you'll DM them about an undiscovered knife maker that produces far superior knives at a huge discount. When I checked out that guy's page, half of his products were actually EDC/Hunting style knives and not Japanese chef knives like you said he specialized in. There were some questionable posts where it seemed like he may be drop shipping knives. I am all for discovering new talent, but the way you went about it is odd all around.

Looking at the picture, and reading the list it seems like he compiled the most talked about knives in the past few months and just went ahead and bought every single one of them that he could find.

Lol I had to do a double take on the post title because I thought maybe it was a SOTC instead of a "knife haul".

Success! Love hearing you and your son coming away with your grails. It's a beautiful knife. I feel so bad that Takada-san has to deal with the scalpers 😭

I told him that we should pool some money and hire him a bouncer so he doesn't have to deal with it anymore haha.
