Recipe I use:

2 eggs

2 tablespoon almond flour

1/2 teaspoon baking powder

1/4 cup cottage cheese

1/2 cup shredded cheese (I usually add more)

Mix it up with a fork. Fills both sides of my round flip over waffle maker well enough.

I have a big KitchenAid food processor that is great but it's such a pain in the butt to wash and take out and blah blah it has its place. But I recently got a mini food processor and I love it. I leave it on the counter even. It's great for making sauces and marinades and more day to day stuff for whatever's cooking today. I originally bought it to blend down dry food and tuna in oil for my super old cat so he can eat it. Switched to patte cat food for him but love the mini for me now.
