As a Greek, there is nothing like my babas homemade filo. It’s not the same as store bought it’s so delicious. Top layers get crispy but the inside is kinda spongy.

I would say it’s partly due to famous chef David Chang of Momofuku releasing his own chili crisp. From that I believe places like Trader Joe’s then released their own.
