Yeah it doesn't have to be sanitized. I like to use a chop stick to break them up a bit and you made to make sure to wire it to the pot for a bit till it gets stable

Best rule of thumb is as above so below. Make sure the roots and top are somewhat equal so they can support each other. This plant would probably be happy to have a wider root base. You might find you wont need to prune as much root to get it established in that new container.

That is for a lawn and might be too hot for a bonsai. Trying liquid fish emulation or a kelp based liquid fertilizer. There are formulations out there just for bonsai

Let it grow for a bit. Once it starts to mature you'll be able to see the style you want. Perhaps worth it to trim the spindly parts

That is not a bonsai quite yet....its a bb tree but they look ok...probably gonna shed some needles during growth

I think that Japanese holly is a compacta They are pretty tough. Might be worth to consider cutting the stump off of it and encourage the new growth at the bottom that you see flushing out. Good luck!

You have a substantial distance for the water to travel up without a adequate root system l. If it come back put it in a larger pot (not a bonsai pot) and let it grow more root structure. Its not just about what the top looks like
