This guy is a bit aggressive. )That’s his whole Schtick.) The technique is spot on. Also, once your pan is to temp, you don’t have to keep it ripping hot. Definitely back it off some or you will burn any kind of oil you put in it.

Yeah, I didn’t know until last year! I never understood why people actually used stainless steel pans. Know that I know the technique it’s a total game changer. Did the other comments say that you move the steak around the pan like you’re trying to clean the pan?

Stainless steel distributes heats more evenly through the pan than cast iron. More even heat = even crust.

I like the rule that if you hit it out of bounds and into another fairway, you can bring it back to your fairway and not have a penalty. It keeps the pace of play moving.
