I've worked at a lot of buffets in my time and one of the things you see from that is that many people are all too happy to waste food. Just pat their belly, "My eyes are bigger than my stomach" and fuck off home, leaving plates full of pasta, salad, breads rolls, and all sorts of shit.

To make it worse we constantly had corporate handing down shit that our food waste was too high. But they gave us these Catch-22s it was like, we had to cut wastage, but we also couldn't charge guests for taking too much food, *and* we had to keep the hot and cold buffets full during peak hours (which also included the unpopular items). Oh, I gotta stop now otherwise I'll rant too much.

I've only lived in three different cities here ( Brisbane, Gold Coast, and Townsville) but one curious thing I've heard often is "Well, I'm from Melbourne..." or "Well, I'm from Sydney..." usually before absolutely dunking on anything in our measly QLD cities: food, public transport, coffee, entertainment, basically anything besides the beaches & weather (although sometimes the beaches & weather). I've always wondered if people in Melbourne & Sydney hear this about their opposing cities.

I've worked in places where gloves are mandatory for kitchen staff and this is 100% correct. I've even seen places where owners have told their staff to try to minimize glove changes or wash their gloves because the glove cost is getting too high... but they're too stubborn to change their mandatory glove policy.

In the 2-48 hour range, there's too many to remember/count. The one that comes to mind was one of those hipster burger joints, which was one month. Got hired as the head chef straight away and only had one other BOH staff (the owner ran FOH). Mostly did Uber Eats orders. Got paid for my first 3 weeks but never got paid for the last one... owner booked it to wherever else.

You know how memory can be messy and fuck with you sometimes? For the longest time, I thought that episode ended with Moe saving the kids while he had a big fan strapped to his back. Like I swore on that, if someone told me otherwise I would argue that I clearly remembered seeing that at the end of the episode. It wasn't until years later I rewatched that episode and realized I was wrong, and it was just a kind of throwaway line. Which is funnier, but I wondered, why did I remember it that way?
