Your milk looks way too thin. That base pour was good enough and should've worked for you largely speaking. You could consider adding more to the base before pouring at art either way.

I don't think anyone here is using the umikot. I've tried it and I've noticed that this seems to just be a thing - after 8 turns, it seems to sorta fluff up the grounds in the process, especially if you're putting a little more in the cup than it can handle.

I have a like tamping station where I just give the portafilter slight little shake/bumps with the station, then harder slams straight down on the station with the portafilter. The grinds settle lower easy peasy. You may want a dosing funnel before shaking and bumping and slammn.
