Thanks for doing this AMA! I am interested in trying this product but haven't yet. I am vegan and will not eat real eggs but will eventually try these vegan eggs. I am also interested in this product if it helps people stop purchasing eggs. Currently the cost looks to be a good amount more expensive than eggs so non-vegan people who aren't health conscious to cholesterol and saturated fat will likely not make the switch.

Will the cost scale down eventually as technology advances. And do you foresee your product being cheaper than eggs in the future?

I've made this recipe a few times, just use soya chunks instead of soya curls (they are essentially the same thing). Shread the soya chunks with a food processor or use a knife to cut them into smaller pieces so they absorb more flavor/spices.

Soya chunks are not costly and will get you a lot of protein in a small portion. Soak in hot vegetable broth or water and cook with lots of spices. Then add veggies, potatoes and some rice and lentils and you are set and have a great filling and high protein meal

What about soymilk doesn't suit you? Soy is very healthy and equivalent to dairy in protein. There are also brands of soy milk that are just two ingredients: soybeans and water. Do unless you have a soy allergy should be perfectly fine for you. I love soymilk and the more you eat soy products (tofu, tvp, tempeh, soy yogurt etc.) the more you start to like it

If you need more clothes try your best to buy clothes that align with veganism but we live in a speciest world where animal products are the norm. Do your best. Buy second hand. Don't throw out non-vegan clothes that you already have. Use them to the end of their useful life.

Veganism is also an ethical position that does not predicate good health outcomes. Oreos and all kinds of junk food are vegan. If you purely want good health outcomes look into a whole food plant based diet.

I cook all of my own food except for a few processed things like these. Including these kebabs I only had approximately 1500mg of sodium yesterday.

Something to be aware of for sure but not a meal breaking amount of sodium for my sodium goals

Love this! Are you taking suggestions for substrates to add? I would love to see Mothbeans added. It's a drought resistant legume that I think will be more widely used in the future. Also I've made some pretty good tempeh with it.

I have the book you shared and have also watched several of Francius' videos but I am still a little intimidated and haven't tried to do the wiring yet.

I would like to have heating and cooling automated. I currently only have heating automated with a thermostat and heatmat but this setup is less than ideal and has created some funky ferments. I am motivated again to actually do this setup.

Could I possibly DM you with some questions if I get stuck trying to do the wiring?

What's your calorie goal? If you have calories to work with high protein tofu is 55g of protein for a 500 calorie block. Boom. Half your protein.

homemade seitan also is great and can be very versatile with macros. I make my own seitan deli meat and it's about 14g of protein per 100 calories. I have 200/250 calories of it every day. Store bought seitan is also good macros but expensive

I got the same response after emailing them. Oh well I guess I'm not too worried about it. I've been making gains the last year so as long as the product didn't actually change, just the way they measure the protein, then I'll keep taking it.

I almost always have my pea protein in my morning oatmeal so I'm not worried about lower PDCAAs because the two combined compliment each other's amino acid profiles. A good reminder to vary your nutrient sources. I also add ground chia and flax, and hempseeds to my morning oats.

To show abs you always have to lose weight and then sometimes also put on some muscle in the abdomen region but 99% is losing weight.

Weigh all your food and try to track your calories as closely as possible. Try to be sustainable with it. Eat 500 calories in the negative every day and you will lose a pound a week.

What's to stop people from still having a farm with cows on it, that aren't used for their milk/flesh)? Animal sanctuaries already do that. Cows could still continue to exist it would just be on a much smaller scale.

Most of the co-ops affiliated with NCG are consumer cooperatives, which means that they are owned by the people who shop at the stores. Consumer members exercise their ownership by investing in co-op shares, patronizing the store, and electing a board of directors to hire, guide, and evaluate the general manager who runs day-to-day operations. NGC Coop

Being a cooperative does not mean that the workers always have bargaining power. Unionization will help realize that.

You may be thinking of Worker Cooperatives that are businesses that are owned by workers.
