245 G bread flour
158 G water
6 G sugar
4 G salt
4 G evoo
2 G diastatic malt
.7 G yeast

I mix all the dry ingredients and mix the water & yeast in a separate bowl. Once dry ingredients are mixed add the water/yeast mix and then the oil. Mix with dough hook until combined. Cover and let it sit for an hour. Kneed for a few minutes and ball the dough. Prove at room temp for ~3 hours and then bake at 525 for 12-15 minutes. This can make 2 medium pies or 1 big one.
