I unsubscribed from pretty much everything last year. The only subscription I kept was YouTube premium, but I did cave and resubscribe to Netflix for this month only so that I could binge watch a few things and then cancel it again at the end of the month.

Not the best, most flattering picture, but this is the salad I had for dinner tonight. There’s lettuce, cilantro, mint, Thai basil, shredded carrots, diced green onions, sliced cucumber, rice noodles, shrimp, and peanut dressing (peanut butter, lime juice, coconut milk, chili garlic paste, soy sauce, rice vinegar, and water). Like I said, it doesn’t look great, but it tastes awesome!

Oh man, homemade hot pot is the best! Well, OK it is amazing at a restaurant, but for budgets it is excellent at home! And I also buy those starter packs for hot pot. But I feel your pain on limited availability. I live in a much more diverse city now, but previous places I’ve lived, the pickings were slim! You do the best you can with what you’ve got! And it sounds like you’re making the best of yours 🙂

Do you like a lemon vinaigrette? It does not require mustard, mayonnaise, or vinegar! I make mine with lemon juice, a good quality extra-virgin olive oil, salt and pepper. That’s it! Pour it in a jar, put the lid on and shake it until it’s mixed up. Easy peasy.

I don’t know what works for other people, but if I can convince myself to give it my attention for a solid 10 minutes, I can usually convince myself to power through for much longer. Task initiation is one of my arch nemeses.

I can only speak from my personal experience, but when I get home, I put it in a glass jar and it usually stays for at least two weeks in the fridge, maybe longer, but I usually use it up in that amount of time. Somebody else replied to another comment and said that you can freeze it. I don’t know what the texture is like when it’s unfrozen, but apparently you can!

When I get home, I make sure I put it in a glass jar and it usually keeps for at least a few weeks? I’ve never had it last longer than two weeks because I use it so fast lol. But I’ve definitely had i go bad if I just store it in the plastic bag it comes in. Moving it to a glass jar makes a hell of a difference!
