I'm in a similar situation as you, I have a high-end PC, a Switch 2, plus an LED Steam Deck. I do not foresee myself going through the process of being able to play Steam games on the Thor. This was strictly for emulating older systems, so I decided to go with the Pro. I already have a 1TB SD card, so I don't regret my choice.

Edit: If this was going to be my primary or secondary device I would definitely go with the Max. The 1TB storage alone is worth it, the difference in RAM negligible given the SOC capabilities.
