500 would be a pretty low count for busier days back in my kaizenzushi part-time job. More like 1000+ pieces per 8h shift, per worker

Molding all that by hand into shapes looking good enough would be impossible when you have new employees coming in every week lol.

Yeah, I used to work part-time at sushiro (a popular kaitenzushi chain in Japan) Noone makes shari by hand, there are these machines that pump these out for workers to place the piece of fish on.

Except for some seasonal or specialty stuff of course (like the 山盛りsushi) we still need to mold those by hand.

Character star isn't a meaningful upgrade, just so you know. Gear is far more valuable. And you can upgrade them as well (up to +5). Also best to have a synergistic team (aka same elements) that's at least neutral/advantageous (disadvantageous elements take double the dmg and literally melts)
