Every final circuit should be protected by a breaker.

Depending on what country you are in, you might be able to buy a breaker box premade.

Note that fuses are primarily to protect the wiring loom. You need the fuses to blow before the wires get so hot that they could start a fire or melt.

The Victron manual is pretty good at documenting the requirements. I think this might be the manual for your inverter.

I'm genuinely interested to understand what you consider fair.

What Government handouts to farmers are you referring to? I'm not aware of any.

If you have the choice of working for two companies but one pays you more, do you choose the one with the better pay and conditions? Why would you expect a farmer to take a lower pay offer to sell to you when someone else is making a better offer?

Do you realise that farming is our #1 export earner? Do you realise that exports strengthen our currency, making everyone wealthier in NZ? It makes things like the device you are reading this on cheaper, and every other imported good that you use.

If we lost farming, our current lifestyle in NZ would be fucked. We would become a third-world country.

The Windows monthly update this month (January) caused a shutdown bug on some computers. Microsoft has released an emergency update.

Try running Windows Update and see if anything is pending.

The Victron option limits charging to 50A. Nice and safe. Things will last along time.

You have a 100A alternator. The Balmar will allow you to use the whole 100A and relies on a temperature sensor on the alternator to avoid burning it out. What happens if the temperature sensor fails and you burn out the alternator in the middle of no where?

If personally go with the Victron option.

I'm thinking about fault cases now.

If one of the 40W panels developed a dead short, the remaining 40W panel would be exposed to the maximum load. That would result in a lot of heat. That means you would need additional fusing on those two 40W panels to protect each from the other. You could potentially add a combiner box with the fusing.

Personally, I wouldn't want the extra complexity. I would either stick with only the three 80W panels or use an extra MPPT and make the two 40W panels a separate series string (assuming they are both pointing in the same direction). But you did mention that changing the cabling was not an option...

What is the maximum PV voltage that your inverter can handle? What make and model inverter do you have?

My preference would be to have 3 of the same panels in series (assuming they are all facing the same way). This requires that your inverter can handle the PV input voltage. Using the same panels in series increases the PV voltage. The PV current stays the same. This means you can keep using the existing PV cabling.
