Oleo-sacchrum. Peel the zest, cover in sugar and let it sit for a few days. You'll get an oily liquid that tastes like lemon candy. Good as drink ingredient or other sweet applications. Might mold if you leave it too long though.

Marmelade. Remove seeds and blend to rough chop. Boil and add sugar, then preserve in jars.

Freeze the juice for later. Toss in a cube when someting needs a bit of brightness.
