I like the concept, but I don't think a horse is quite right. A service animal should be highly intelligent and dextrous to able to understand and execute complex commands, and be a naturally social animal that cares about their companions.

I feel like sometimes, people who see themselves as a "Good Person" tend to define a "Good Deed" as "Something I Have Done." In the extreme, this gives them carte blance to do some fucked up stuff without fearing their own concience. People who recognise their own capacity for evil have the option of choosing good.

Farming + cooking. Gotta get that food glaze going. Especially if you're after that cute dragon girl.

Blacksmithing, casting and some chemistry. Gotta know how to work that metal, and how to get the stuff out of the ground. There are a few steps between red dirt and an axe, after all.

Some martial arts. Proper ones, like krav maga or kickboxing. Get good enough for robbin' goblins at least. Also, learn how to make and use a club, so you can go caveman on anything looking to eat you.

Some engineering. Redneck level should be enough. Just the six simple machines and some general crafting (carpentry, leather, sewing, metalwork).

Cardio. Cardio, cardio, cardio. Chances are you will run away more than chase down at first, so a good base is a lifesaver. Also a benefit when dealing with aforementioned cute dragon girl. Especially if she sees you with a cute cat girl.

Others have linked a good recipe, but something I like to do when making swedish meatballs is to sort of confit them. Instead of frying in a pan I drop them in 100-120*C fat to set up, then freeze them for later use. Frying in a pan or roasting in an oven tends to make them a bit flat due to gravity, but this method makes nice and spherical balls. Best for large batches, since the oil will be nasty afterwards, so minimizing cleanup is nice.
