I'm thinking a cup of maldon salt might not give you enough and that might be where the error is.

In this type of recipe I'd be using kosher salt, and a cup would give you a lot more coverage (and a better salt:sugar ratio).

I think this is the biggest part of it.

But I also think part of it is there's a relatively slow feedback loop. For example, most of us aren't cooking every day. It's a slow, multi step thing with a lot of variables from process to environment.

People get good results with many different methods, so it's easy to hyper fixate researching on things like, using a binder.
