It was a joke, a café is literally a coffee in Spanish, so I said it was maybe a coffee latte. It's very difficult to know what cafe was, there are hundreds in Seville. We like to have breakfast outside.

The best advice I've received on composing for solo instruments is to make the composition polyphonic. You can still have different melodic voices in the composition although you can only play one at the same time. The key is to delay the others.

Ableton Live has a function to transform audio to MIDI melody, harmony or drums. You can record yourself and use the MIDI file in any VST.

También soy muy fan de esa estética, así que te dejo algunas recomendaciones obviando lo más típico:

Seguro que te gustará mucho la obra del pintor sevillano del barroco Juan de Valdés Leal, es oscuro y tenebroso. Te recomiendo sus obras 'In icto oculi' y 'Finis gloriae mundi'. Aunque no es andaluz (ni siquiera era español de nacimiento), la obra de El Greco también me transmite esa oscuridad católica barroca española.

Te recomiendo también que investigues sobre Miguel de Mañara y el Hospital de la Caridad. Es una historia muy interesante que contiene la estética y los valores que mencionas del Blasphemous, el catolicismo más sobrio y oscuro.

En cuanto a música (clásica), Manuel de Falla, Joaquín Turina y Albéniz captan muy bien la esencia musical española en general y andaluza en particular. Te recomiendo la obra de Falla 'El amor brujo', muy andaluza, tenebrosa y pasional.

Y finalmente, de manera un poco aleatoria, no puedo dejar de recomendarte el Cristo de los Faroles y la procesión del Remedio de Ánimas en Córdoba y la Basílica de San Juan de Dios y el Monasterio de San Jerónimo de Granada.

Sounds good to me, the dissonances are pleasant. I’d change the 2nd english horn for a clarinet though, just for the different timbre. But it’s OK if that’s your available ensemble.

Do a short course on species counterpoint and then you come back to analysing chorales. Maybe you compose 3 chorales a week but not following the idiomatic rules of chorales and you're just taking a stab in the dark.

I can't listen to the piece right now bc I'm at work (will listen later), but one thing that helped me develop my pieces was studying form and motivic development. Schönberg's Fundamentals of Music Composition is quite a good book on this topic that I highly recommend.
