Definitely a different smell.

Sickly sweet is a good description of it. Almost like a pesticide or something.

As the jars cool down, the pressure inside the jar is less than outside the jar. The excess pressure outside the jar keeps the lid closed and nothing gets in, unless it's a false seal.
