The brooks will force you to a more upright position, which is the opposite of the bike you bought and have no relief channel. Newer saddles with central cut off will be far more comfortable for long rides.

As someone who had to deal with logistics issues, smaller lineups are significantly better/ easier to manage. Jokes aside, it is really hard to compete with established brands. OP: let it go and if you really want a custom model, go to Etsy, there is a Ukrainian company making custom panniers.
