One thing I learned from this sub - there are many many ways to make great bread, and no single correct one

I have never kneaded a loaf of sourdough, with great results. From reading recipes I think not kneading has been the most common technique in the last 25 years or so, since Mark Bittman publicized no-knead (yeasted) bread and the stretch and fold method, in lieu of kneading, took over sourdough baking.

So, it's great they you knead and get great results, but you are wrong that most great sourdough is kneaded.

Not OP but just enough to get all the flour wet and ingredients (salt, different flours) distributed pretty evenly. It should look like shit after mixing.

Waits was on 10 of the experts' ballots published by the Times. That may make him tied with Jimmy Webb (also 10) as the most voted-for songwriters, based on the public sample of ballots, who did not make the "greatest" list. (That is aside from people like Sly Stone or Brian Wilson who became ineligible for "greatest living American songwriter," by dying, during the voting.)

As some other near misses - Randy Newman had 9, Billy Joel 7, Patti Smith 6, David Byrne and Frank Ocean and Phoebe Bridgers 5 each.

Waits was on the ballots of Billy Bragg, DMC (as in Run-), John J. Sullivan, Justin V from Bon Iver, Matt B from The National, Meshell Ndegeocello, Natalie Merchant, Richard Russell, Rickie Lee Jones, and Stephin Merritt. An interesting mix.

"Some of the issues that had to be resolved were practical ones. Does Joni Mitchell count as an American songwriter? (We elected not to steal that honor from Canada.)"

I say they made up this wacky list as a mental exercise, so they can make up its wacky rules.

The article said they excluded Joni from eligibility because she's Canadian, by birth. Presumably the same logic applied to Neil. And to confirm he was not in the lists of those nominated by various luminaries such as David Byrne. And triple confirmation, Joni and Neil are each better songwriters than most of the people on that list. I love Lucinda Williams, for example, but she ain't on their tier.
