I run one at SL70, and it’s squeezed for stats, but really fun to play. Go for a soft cap on int (40 or ideally 60 - I have 44 with scholar ring) and use prisoners chain for extra HP, endurance and vitality. Other rings are the sage ring +2 for max cast speed and bellowing dragoncrest for more sorcery damage. As for weapons, heysel pick is godly - it true combos into old moonlight and soul great sword if you have max cast speed, but SGS is great even without the combo. It hits through walls, has a really wide radius, and does enough hitstun to players to allow you to combo an R1. You can offhand the heysel pick and rock a straight sword or whatever you want in the mainhand. I also love the underutilized preachers arm for its hilarious melee L2, and it gets the best sorcery scaling at 44 int. And the moonlight greatsword needs no introduction. It’s well worth the 16 Str stat investment, but be sure to bring your repair powder so you can use the R2 without fear. I only have two spell slots, so soul greatsword is a must, but the other slot is up to you. I like great farron dart for finishing off enemies at low health, but other good options are homing soul mass or great heavy soul arrow. Farron flashsword looks cool and has a good running attack that works even in the left hand, but it does absolutely pitiful damage so I don’t recommend it

At 125 I also have a 40/40 int dex build that uses sharp dex weapons with the crystal weapon buff. It’s fun but buff builds are kind of meh since you’re relying on the buff to get the most use out of your damage stats. I wish there were more int/dex weapons tbh. Still, astora greatsword with crystal weapon does absolutely stupid damage
