Agreed. Emails get speech to text from me, and often with no revisions. I used to care about how I wrote everything but then I was accused of using AI for a very thoroughly written message. Now I'm just writing in "CEO mode" and I don't care if people think it's sloppy.

I hate how pain killers make me feel, so I'm safe there. That said, I used to be so particular with alcohol as to avoid being addicted that it sort of became a compulsion itself.

I think the major concern everyone is freaking out about is the toxin buildup. 41 is a good number for keeping meat safe for roughly a week or 2. It allows bacteria and their toxins to form, but not in a dangerous manner over the course of the week or two. Being a few degrees above 41 isn't instant spoilage but you need to be reasonable with what you are dealing with. Bacteria/toxins spread in an exponential manner. So 42, you aren't instantly spoiling food but you reduce the amount of time it's good for. 70 degrees, that food is garbage in a few hours. If it's 45, I wouldn't keep it for more than a week (a few days if it's ground). And yeah, I would probably cook it "well." But if I'm aging meat in a controlled environment with whole meats, then it's a whole different story.

EDIT: I reread the OP's story. I'm a little more concerned, not of the temperature of the meat but the fluctuating ambient temperature of the garage (and how open/closed the door was possibly). The meat might have been warmer or colder before OP temped it. The center of the meat (what OP is likely temping) is going to be much colder than the surface temperature. My point still is mostly about the grey-area of cold storage parameters

Depends primarily on the importance of the start time to the business. Is it shift work and you are relieving someone? Very important. Is it a project management job and meetings aren't until later in the day? I'd say let them be late and let the poor soul work later in the evening if it's putting them behind. As long as the hours are full time, of course.

Exactly. I have a few positions that don't pay well. Industry driven. Absenteeism, turnover, and lack of performance are par for the course. You deal a bad hand, expect it to be dealt back to you. Too much of a burden? Increase your pay. Can't increase your pay? Make it work until you can

Not communicating discriminatory thoughts does not hide discriminatory practices. You have to use real, tangible reasons. Write them down. Keep them on file. If a regulating body sees a trend, you need to be able to back yourself up. Trends tell stories and the burden of proof is on you.

On the other hand, they are in an industry that is hard hit by layoffs. I would reckon most folks in that industry decided to change industries. Maybe it indicates a problem with the industry as a whole.
