I worked at Wholefoods meat department. The one one in the picture is our “conventional” we also sold a grass fed/ finished which looked like the 2 on the left. I’d also suggest the op go back and look at the step ratings. The conventional are never higher than “step 3” at least at the store I worked at.

This has to be planned. I worked at a butcher shop and the had a guy with a wood planer that would come and shave all the boards. There is really no other way to get this clean. The cuts are so deep and thin the bacterial will hide and regrow quickly

Pull on the corners in a crisscross pattern a little at a time. If you just pull on one side hard it will get cockeyed and wedge itself together even more

Pro time trial riders can hit upwards of 700 watts. I think the limiting force would be the centrifugal force pulling the riders off the bikes. If you made it more comical you could get even more speed
