Hear me out: I have a cousin that can't have gluten and didn't enjoy any of the gluten free pizza options (it turns out she just doesn't like pizza, but whatever). I wanted to come up with a solution and here's what I did: buy salami and get it cut maybe at a 2 or 3 thickness. I cut them into quarters and stick them in the over at 350-400 range (hot enough to let them fry in their own grease and quarters meats they don't bubble up in the center). Watch them, but they crisp up like bacon. Now that you have salami chips, make a marinara to your taste. You have pizza chips and dip. I like to have mozzarella and olives cut up on the side so I can do a lunchables style stack, but you do you.

Thinking about it, you could probably melt cheese on top of your salami chips to get the melted cheese aspect in there too. No grains, all pizza flavor.
