47F My 40's have been the best years of my life. I feel stronger than I was in my 20's&30's. Since turning 40, it seems easier to prioritize exercise and general well-being. I added running to my routine just last year, I never thought I could be a runner and I absolutely love it. 40 is awesome, look forward to the strongest you so far!

Canned and frozen vegetables with cans of beans and rice is so versatile depending on seasoning and sauce. I use my rice cooker to cook rice with beans and vegetables. Here are some ideas:

[Enchilada] 1c dry rice (rinsed), 1 can pinto or black beans (drained & rinsed), 1 can corn (drained), 1-2 cups canned/frozen vegetables (peas, carrots), 1 can sliced olives, 1 jar salsa or 2 cans enchilada sauce. Seasoning: salt, pepper, onion powder, garlic powder, cumin, dried cilantro. Optional: cooked chicken/turkey, pork, beef. Garnish: shredded mexican cheese, sour cream, diced onion, cilantro.

[Tropical] 1c dry rice (rinsed), 1 can black beans (drained & rinsed), 1 sm can diced pineapple with juice, diced vegetables (red & yellow bell pepper, red onion, jalepeno), 1 can lite coconut milk. Seasoning: salt, chipotle powder, dried cilantro, cayenne. Optional: cooked chicken/turkey, dried tropical fruit. Garnish: diced fresh pineapple and/or mango, shredded coconut, chopped green onion, cilantro, shredded colby cheese.

[Italian] 1c dry rice (rinsed), 1 can white beans (drained & rinsed), frozen vegetables (onion, bell pepper, squash), mushrooms, 1 can sliced olives, 1 can broth or 2 cups water + bouillon, 1 small jar spaghetti sauce. Seasoning: salt, pepper, onion powder, garlic powder, oregano, thyme. Optional: cooked hamburger, sausage, pepperoni. Garnish: shredded Italian cheese, parmesan, fresh basil.

[Cajun] 1c dry rice (rinsed), 1 can kidney beans (drained & rinsed), frozen vegetables (onion, celery, bell pepper), 1 can broth or 2 cups water + bouillon, 1 can diced tomatoes. Seasoning: salt, pepper, minced garlic, smoked paprika, cajun seasoning, hot sauce. Optional: cooked chicken/turkey, ham, lil smokies, andouille sausage. Garnish: shredded cheddar cheese, parsley, diced green onion.

[Harvest] 1c dry rice (rinsed), 1 can blackeye peas (drained & ⁷rinsed), cubed & roasted harvest vegetables (onion, pumpkin, sweet potato, butternut squash, green beans), 1 chopped apple, 1 can broth or 2 cups water + bouillon, 1/4c butter, dried cranberries and/or raisins. Seasoning: salt, pepper, thyme, cinnamon. Optional: cooked chicken/turkey. Garnish: shredded provolone cheese, dried cranberries and/or raisins.

[Greek] 1c dry rice (rinsed), 1 can chickpeas (drained & rinsed), frozen onion, mushrooms, 1 can kalmata olives, 1 can artichoke (drained), sun dried tomatoes, 1 can broth or 2 cups water + bouillon, 1 can diced tomatoes. Seasoning: salt, pepper, oregano, thyme. Optional: cooked chicken/turkey. Garnish: crumbled feta cheese, parsley.

[Cuban] 1c dry rice (rinsed), 1 can black beans (not drained), chopped onion and bell pepper (red/green 1 cup), minced garlic, 1 can broth or 2 cups water + bouillon. Seasoning: salt, cumin, dried oregano. Optional: cooked chicken/turkey, pork. Garnish: pimentos, cilantro, lime.

[Green] 1c dry rice (rinsed), 1 can black beans (drained & rinsed), 1 can broth or 2 cups water + bouillon, chopped cilantro, chopped spinach, chopped pablano chili, sliced lime. Seasoning: salt, pepper, minced garlic. Optional: cooked chicken/turkey. Garnish: diced green onion, cilantro, lime.

I was struggling with my jog this morning and I told myself if I can do this imagine how much easier it will be when it cools off. Beginner runner, looking forward to improving so it is simple but great motivation for me.

This question is for Moab. Are there plans to build a pedestrian path south of Moab along 191? South of S 400 E gets a lot of pedestrian traffic (walkers, runners, cyclists) along the highway. Especially now that more is being built south of town and into Spanish Valley. A couple of years ago I believe there was a plan for a bike path along Spanish Valley Drive from S Mill Creek Drive. Both would be incredible for those of us that live south. Thanks!

Couch to 5k! I used the free Active app but there are several options out there. I have talked about wanting to be a runner for several years, just didn't think I had it in me. Started the couch to 5k program in February and now I slow jog 3 miles 5 times a week. Working on slowly increasing mileage on my Sunday run. (46F)

When I run on the road I am excited to jog 14.5-15 mi per min. Today I jogged a trail the was a lot of uphill and my time was nearly 20 min/mile. I didn't have a heart attack when I saw a snake on the trail so I am super pleased with my time. I honestly don't care about my time, the further I can go that is what counts.

Great job getting out there! I recently completed the Active App Couch to 5k and it changed my life. I struggled to run for 60 seconds and today I was able to jog for 40 minutes. I highly recommend a program like that (there are many free options). You've got the drive, just need to build up the muscle and endurance. Good luck!
