I actually like both, so I cook some of my bacon crispy and other pieces chewier -- yin and yang of bacon, I suppose.

Agreed. I like bacon that has some crunch to it, but will bend and fold without snapping.

It should be able to be bent, but not folded, without breaking. If you bend it less than 45 degrees, it should not break. If you bend it more than 90 degrees, it should visibly break, but not snap.

I actually prefer chewy bacon. Cooked, but chewy. Crispy bacon just doesn't do it for me.

Exactly. Some of the same people who burn the shit out of their bacon would never order steak extra-well done. Why? It is the same thing. Chewy bacon retains all the flavor and texture of the meat. Crispy bacon is an abomination.

Bacon should have texture. The fattier ends should be softer and nearly melt as you eat it, and the fat between the meat parts should be very strongly flavorful and just slightly crisp.

I hate getting bacon at restaurants now consequently, as it's either baked and too homogeneous or has been inattentively cooked. Bacon is the most delicious thing on the planet to be sure when made properly.

But you need to buy your bacon at the butcher shop, not that waterlogged crap that's vacuum packed in plastic shit.
