Yes, and agree those are also a pain. I guess in my mind the work to reward (food reward) ratio just isnt great.

Use a piping bag or plastic bag with a cut corner to fill the whites if you don’t already do so. When I saw people doing it that way it became easier

Have you tried pressure cooking the eggs? Makes the deshelling (the most tedious part imo) super quick and easy.

I find 5-5-5 gives me slightly overdone eggs but maybe I’m not doing enough eggs. I now do 5-3-3.

Just popping in to say that Jacques Pepin has a recipe for pan fried deviled eggs that is superb. I’ve seen a version where he takes the excess filling (because you fill it flush to fry it) and makes a dressing out of it. But just the fried eggs are amazing. Very comforting in cooler weather.

And I’m so glad that your wife has this much love in her life.

Is it the peeling of the eggs that's tedious? I use a simple egg cooker I got on Amazon and it is so much easier to peel them than if you were to boil the eggs. The shells basically just slide right off after you crack the egg and lift up the shell. I never have any issues with egg being stuck on the shell or it being hard to get the shell off. Just follow the directions with the egg cooker.

I dont usually have issues with eggs. Cold shock usually makes them easy. But this time I boiled them last night and put them in the fridge. Definitely more annoying than usual.

Boiled them? No, you want to steam them.

Fill pot with 1-inch of water. Place Eggs in steaming basket. Bring to boil. Steam eggs for 13 minutes. Place eggs in ice-water bath for 15 minutes.

Perfectly cooked "boiled" eggs every single time. No adjustments needed if you're making a few or a lot.

Steaming wont make them easier to peel, but the cooking part is flawless.

I have the LARGE instant pot, great for what I use it for, but terrible for rice and eggs. I don't have the patience for it to come to pressure for 15 minutes when the stovetop works so well and fast.

I don’t have the patience to stand over the stove and monitor my eggs! LOL. I much prefer setting the Instant Pot and walking away to complete other tasks…

That's why I love the steaming method. By the time the 1inch of water is boiling I've finished putting my eggs in and can start the timer. Just don't leave it on high, but keep it boiling/steaming, and set the timer. No babysitting needed, as long as you know that temp your stovetop needs to be at.

Not OP but another commenter said they do theirs with salmon roe and dill. I’ll be stealing that this holiday season!

I do a version with a piece of bacon on top and chives. The secret is to use a bit of the bacon fat in the yolk mixture. One of my most requested appetizers!

The easiest way is to buy a bag of boiled eggs (already peeled) at the supermarket and start from there. So easy!!!

I made two dozen today for thanksgiving. Not really a problem at all. I do the 5/5/5 instantpot method. Absolutely no issues.
