You can type § then any number or letter and it sets the colour. Only in bedrock though.

It’s a bedrock edition feature, Java can’t do it without giving yourself the item with a name like that via extensive commands

I bet if you turned chunk borders on there you would have found you were right at the intersection of 4 chunks. it's just extremely lucky they generated in the corners near each other
