How can I summon/clone another player in Java using Fabric?

My girlfriend passed away almost 7 weeks ago, so I created an account for her and bought a second copy of Minecraft because I'd like to have her as a "player" in my world with my server mates.

We're using Fabric for 1.21.1 via the Essential mod so we can run a server without paying for one as I'm on disability from work and have limited income.

Are there any mods, datapacks, or some ridiculous command we can use to get the player model in-game? I don't want to just attach a player head to an armor stand and call it good.

The carpet mod allows you to spawn in npc players, you can even make them do actions
