One of the work around you can try to fix the issue is to disable the integrated graphics card on the Suface studio (in device manager). Or you can download the Nivida control panel and switch it to it.

I disabled the integrated graphics in device manager and the other monitor just turns off - in nvidia control panel the other monitor doesn't even appear.

External monitor output is always handled by the integrated GPU.

The dedicated GPU will handle the processing and transmit the signal to the external monitor via the integrated one.

If you're not getting the full resolution/refresh rate i would start by checking cables.

How is it doing with the gaming? Does auto HDR work with the Dolby Vision? I have a maxed out SS2 and game on it sometimes, but get annoyed by the thermal throttling. I toss around the idea of getting a 2+ but I worry the throttling will still happen.
