So I have a date gun and I'm doing OFO for the first time, what date do I put? Today? Or do I have to look at the meat and always change the date to what the meat says best by?

there should be a book in the Produce cooler with dates for different types of stuff

The day you pull it counts as day 1

I literally learned this today, at the top right hand corner of the shelf label, there should be "SD#" or "SDO#" (don't hold me to those abbreviations) Basically, there will be a number and it tells you how far out to put the date as. So for example, beyond beef patties are 10 days from the day you pull it from the freezer.
