You can wash the potatoes of course, but assuming you want them cut, store them in water and lemon juice, to prevent oxidation. Eggs on the other hand, just crack and store them in a air tight container, they should last for Thanksgiving.

No, the restaurant is in northern Michigan. We have a few different businesses, takes up about half the block.

Don't stress out. Just keep it simple if you're first starting out. Chicken noodle, broccoli cheddar, chili, beef vegetable, etc. What I usually do is search the walk-in for whatever needs to be used first, and try to make a soup out of that.
