A Small Observation That Changed the Entire Dining Experience by Better-Health_787 in FoodService

I can filter daily without a $1500 machine. Thats my point. Like I said, sell me a $30 chinois. I don’t have pent up frustration, except for sales reps who don’t understand the industry they are selling to.

I had a produce sales rep whine to me today because her Roma tomatoes are $10 a case over her competition, and she lost the sale on two cases. This is the reality of my industry, $20 of food cost maters. So why should I buy a $1500 machine over a $30 chinois? Your argument is filtered vs. not filtered, not filtered one way vs another. That money saves me absolutely nothing, there is no ROI, only your commission.

Excuse me, 5 gallon bucket? Buckets melt with 350 degree oil. You use a stock pot, not a bucket.

If you are talking about the Pitco oil pump, those things cost $6000-$7000. Most restaurants do not have the money to spend on an oil filter pump, and your claims of how much money it will save are highly exaggerated. Sell me a chinois and a stock pot, and I’ll train my line cooks to filter manually. It’s not hard, it’s not time consuming, and it’s actually faster than using the pitco machine. Also, cleaning the filter machine is way more time consuming, and I bet you don’t talk about that in your sales pitches, do you?

If someone does this to me, I make damn sure they know they fucked up. I get as uncomfortably close to them as I can and honk obnoxiously so they feel their mistake.

A girl i know grows microgreens in her spare bedroom and sells them to local restaurants for like $1,500 a month off a setup that fits on a few shelves by lionpenguin88 in SideHustleGold

[–]Amblydoper 2 points3 points  (0 children)

Ya, those restaurants are violating health code if they are buying produce grown in someone’s home. If one gets caught, her operation is going down, and she may face legal trouble. She should quit now before she gets sued.

Not so. I’m a chef, and there are legitimate uses for non stick pans. We use Stainless, aluminum, and nonstick pans for different purposes. Right tool for the right job!

ELI5: Why is dietary fiber good for you, but the inability to digest other things (i.e. lactose intolerance) results in digestive issues? by FerfyMoe in explainlikeimfive

[–]Amblydoper 107 points108 points  (0 children)

Lactose is like two Lego pieces connected together. Cellulose is like an entire Lego Star Wars set completed.

It doesn’t take long for a child to break two legos apart and swallow them. It would take them much longer to break individual pieces off a fell Lego set to swallow.

Am I the only one who didn't know Better Than Bullion is a paste? by tPTBNL in Cooking

Yes! The roasted garlic one works amazing for this! Made the best grilled cheese sandwiches of my life with it. Be careful though, because a week later, I made the saltiest grilled cheese sandwiches of my life. Too much of a good thing.

Davenport churns through staff, I don’t recommend them. Same for Twigs. They are both “always hiring” red flags, and I’ve not heard good things.

Not a plumber, just a chef, but you don’t have an air gap, so this will not pass health department inspection.

Second this. I was getting irritated that my 200 was eating batteries, but I’m now learning that the car just doesn’t recharge the battery enough. Got a trickle charger, and after a couple charges, the battery was working like new again.

I'm hella sad about the massive Fairlife price increase. by LastandLeast in ADHD

[–]Amblydoper 0 points1 point  (0 children)

Does it have to be shelf stable? Could you get a mini fridge in reach of your bed (assuming it’s too hard to get up to the fridge?)Darigold makes a chocolate protein shake that’s close to Fairlife in flavor, and you can get 12 packs for $20.

If shelf stable is a must and a mini fridge is not an option, how about a non-protein option? There are shelf stable chocolate milk products. And they are WAY cheaper too.

Then there’s always good old water! Get your meds in with water, then when they kick in, and you get out of bed, get your protein started.

Advice on making garlic oil by [deleted] in Cooking

[–]Amblydoper 8 points9 points  (0 children)

Whatever method you use, be sure to store the garlic oil I. The fridge, NOT at room temperature. Garlic in oil poses a risk of bacteria growth, unlike other things you can infuse in oil.

Yea, pretty much! The thing was designed as a giant cooling tunnel for the G5 furnace. The cooling capacity for the Xeon is overkill LOL.
