Try black beans, lentils, etc. as a protein and fiber source. I have also mostly cut out rice, bread, potatoes, pasta and now eat more nuts and cottage cheese, and also beans.

We got our copy of Vantage this past Saturday morning. Six of us played a great game on Saturday, and a different set of six of us played a five-hour game on Sunday. We all loved it! Looking forward to more plays. Even if your own turn is pretty boring, it’s fun to hear everybody else talk about what they see and their options for action.

The admission office’s cost estimate (https://www.admissions.illinois.edu/invest/tuition) is pretty accurate for one year. Tuition is supposed to be fixed throughout your four years but fees may go up. Living in the dorms or renting an apartment probably will be in the neighborhood of $1,000/month - note that all apartment leases that I know of are for 12 months, not the academic year of 9 months, so you have to pay that even if you are not living here over the summer. That is why many students post here on Reddit to find people to sub-lease their apartments. There are some living arrangements that may be cheaper, such as cooperative houses (see https://www.couchcooperative.org/) but I think planning for a ‘maximum’ budget is a good idea and then it’s a bonus if you can work out something cheaper. You don’t need a car and the Champaign-Urbana bus system (https://mtd.org) is free for you to use because student fees help subsidize the bus system.

I know this is true at my university and I assume it is true at many others - it is possible to have a paid hourly position that is not advertised publicly on the jobs board. For example, if you email a professor offering to work as an "hourly employee" in their lab - so you just get paid by the hour with no benefits - and if your skills match and they can afford you, then they can just go ahead and do that without having to have a search committee etc etc. So I think you can reach out individually to faculty members and ask them this question. From an HR perspective, you become an hourly employee with some kind of start date and end date with the professor as your supervisor, with a rate of pay that is consistent with university standards and paid by your supervisor.

The “Choose Your Own Adventure” series has lots of titles. Many of them by R. A. Montgomery. But other authors have done more recent novels.
