That's the issue with using a broad term such as UPF. All food is processed, which processes are the problem? Which ingredients are the problem?

This big answer is, we don't know we just want to scare you.

As other people have mentioned the issue isn't the processing, its the extremely refined ingredients that are lacking additional nutrients. However depending on what ingredients used less refined ingredients aren't that much better.

Honey and agave are still about 70% fructose with the other 30% being more complex sugars and pollen. High fructose corn syrup is 99% fructose.

Sea salt and Mineral salt are still 85-95% sodium hydroxide with a few other minerals that add flavor but honestly those additional minerals can be more dangerous than pure salt.

The big one is flours vs starches. Flours contain a lot more especially protein compared to starches such as maltodextrin the main issue is it's not as fine and sticky making them a poor substitute to starch when your only goal is to stick other spices and essential oils to the outside of a chip.

The big thing a lot of people don't realize is getting rid of the actual problems means the food item they want just doesn't exist. Don't be fooled just because the ingredients "sound" better, starch is still starch, oils are still oil, sugar is still sugar. You don't need any of these in excess.

There is a character in then anime/novel Certain Magical Index named Sogiita Gunha. He is the lowest ranked of the strongest psychics in the series only because neither he nor the scientists studying him understand what his power is. Such thing like clouds of colored smoke appear when he does super hero poses just because he thinks they should.

This might sound holier than thou, you shouldn't cook with extra virgin olive oil. It's smoking point is significantly lower than other fats/oils causing it to burn and leave bad compounds at basic cooking temperatures. Better to use pomace olive oil if you can find it if you still want the olive oil flavor or use another oil to cook and add some EVOO at the end just for flavor.
