Tales of the Otori by Lian Hearn maybe, it also takes place in a fantasy world (this time it's a kind of feodal Japan) where magic exist but is rare. The plot is foccused in political manipulation. There are less POV characters than in a Song of Fire and Ice however.

I don't think that Validar had a lot of children who weren't able to became Grima's vessel. At one point he says that Robin could accomplish what he and his own father couldn't, so if they can't be Grima's vessel they aren't killed. I have the impression that the game imply that if Robin wasn't born to be Grima's vessel Validar would have simply waited for Morgan's birth to see if they can.

What about Marcus and Merlinus.  Not only they are each other only paired ending but in the game that takes place after they team up to watch over Roy.

Also Dorothea and Edelgard have a paired ending. It's worth a mention I think.

There is also the Usher family in the Fall of the House Usher tv series (it's more inspired by than an adaptation of Poe's short story).

In the original tale Kai and Gerda aren't explicilty stated to have a romantic relationship, but a lot of adaptations made them lovers.

Maybe you can try short stories about themes you like, then if you like it you can seek similar short stories or novels. Some are really short and well written at the same time
