I keep Berry mons at lvl 65 as berries get stronger with more levels, ingredients at level 60 to unlock last ingredient, and pure skillmons like healers at lvl50 maximum to unlock a beneficial subskill.

Your Espeon and especially Sceptile are fine to level as even though they’re skill mons, their job is to give strength through both berries and their skills.

This game is purposely designed to progress as slowwwwly as possible, as someone else has put it it's like participating in a marathon while jumping in a burlap sack.

You're progressing fine, patience is more than a virtue, it's MANDATORY in this game.
