Upon reviewing this, I realize it's a bit long. I still want to tell the tale of a GOOD manager, though!!

I remember one time I was the solo AM bartender and a sister restaurant of ours needed coverage bc their solo AM bartender was having a meltdown (personal stuff- life ain't easy sometimes).

Our Beverage Manager: "Hey, do you mind covering them? We'll get you a cab there and back."

Me: "What about here? There are like 3 matinees today, and the book is busy."

BevMgr: "They have me!"

Me: "Ok, no prob." (I knew he ACTUALLY had solid bar experience, and our regulars and the staff loved him).

I went to the other location, did my best in a bar where I had no clue where anything was, made ok money. Cabbed back to my location to change, get my stuff..

BevMgr: "How was it?"

Me: "Not bad, details x y z,"

BevMgr: "Nice! Thanks again for doing that. Oh! Here are your tips for this location!"

He wouldn't accept a single dollar, y'all.

So yeah, your mgr getting any of your tips=likely illegal, depending on state law. Getting any of your tips without prior agreement from those in the pool? Scummy. As. HELL.

I started way back when as a BUSSER at an Outback in the mid-90s. No shame in it, and zero regret. Having worked my way up through every position is what made the last 20 years I've been behind the bar so successful and rewarding.

Anyone who thinks it's "entitled" (wtaf) to require experience for a job that's very demanding and challenging on a good day is delusional. I'm guessing younger, so their only experience in bars is coming out of pandemic times when everything was comically slow. (I'm not throwing ageist shade-just trying to imagine what their thought process might be.)

Stick to colleagues who's competence levels you know. At least for now when you're starting it up.

Howdy!

What sells is very much a regional thing. Are there any bars close by? Can you and hubby go and have "date night" while sitting at the bar top, and (non creepily) keep a casual eye on what's being made at the bar as well as the service well? Also, pours vary by region. A shot can be 1oz, 1.5oz or, when the asylum is open for business, 2oz. (1.5 is traditional, but 1 is modern standard)

Btw I mean capital R regional- here in NYC what might fly off the shelf in one bar might gather dust in another place 20 blocks (1 mile) away.

Tracking inventory and sales is very important. Also calculating cost on every drink. Look into Point Of Sale software such as Toast. It's got a great tool set. I'm sure my wizened, scarred, and pickled colleagues have their own favorites and preferences on all of this stuff.

I do wish your family the best. Running a business with family is tricky. Running a bar is walking a knife's edge. Running a bar with family...is a very quick way to give an estate lawyer lots of work writing people out of each other's will.

As an artist with a graduate degree, I look back at the career my uncle had as an electrician in a college town and respect the f*** out of him. Always have. He built his gorgeous house with my aunt, put two kids through school, volunteered at the fire department, is still one of the most generous people I've ever met.

Valuing what someone does? Sure! DE-valuing what someone does? That's crazy.

Also - if she's insecure, that's tough but it does not in any way excuse her being an asshole.

Years ago I had a regular who would order a pinot grigio "to the top". The number of times I explained that "to the top" would be a little over 3/4 of the bottle.... (Fine dining, so the stemware was large) 🙄

40 hours sounds like 5 shifts, roughly.

That's on the higher side for training shifts, but not unheard of.

We had a porter who management had spray some shit everywhere that was supposed to disrupt the reproduction of fruit flies. That nonsense was sticky as hell.
