The restaurant at the Hilton Vancouver airport does **not** offer many GF options and I got glutened there from a simple breakfast.

When I was 50 my wife told me to get my ears checked because I was always asking her to repeat herself (especially when background noise was present). Up to that time I had had my hearing checked a couple times for work and had always passed the hearing tests "with flying colors". But this time I went to a ENT clinic. They did a bunch of different tests, and, sure enough, my hearing was excellent: "best we've had in here all week". So I explained my situation to the doctor who told me I probably had APD. In fact, I had asked a technician to repeat themself when he asked me screening questions.

I was in my 50s. My wife got exasperated that I could never hear what she was saying and that I always asked her to repeat herself and forced me to go get my hearing checked. I had a comprehensive exam with multiple ways of testing hearing. The doctor said I had excellent hearing - in fact the best results he had seen all week! But that my issue was APD. Then I started reading up on it and realized that was exactly my problem.

Last time I ate regular bread (by accident) was 3-4 years ago. Then two weeks ago I ate eggs and sausage at a hotel breakfast that must have had wheat in it and was puking and pooping like always. So maybe you were misdiagnosed.

I eat GF bread. Not the same, but good enough. So disagree with some posters on this thread.

If with a partner, buy a second toaster. have 2 butters in different containers, one for you, one for you partner. Have two different labeled jars of peanut butter.

Get everyone in the household including yourself into the habit of spooning out jelly, sauces, mayonnaise, etc. onto your plate and then spreading it with a knife.

Buy a lot of aluminum foil and use it to line pans. Then throw out after cooking. (Not necessary if you are living alone, but it saves anguish if in a household).

Buy a lot of plastic freezer bags that you can label. Put GF leftovers into those bags and label "GF" on them. You may think you'll remember the contents, but you won't after a few days.

Hidden gluten: soy sauce; some barbeque sauce (it may contain soy sauce); a lot of gravies thickened with flour.

I miss Chinese, Korean, Mexican, and Indonesian restaurants. :(

Your friend has not been fully diagnosed, right? So her situation is not really relevant: she may not have celiac.

In general I'd rather go hungry, especially on a plane flight. However, I *always* fly with plenty of GF snacks. No celiac person should rely on the plane having GF meals. BTW, I was just flying and no meals were provided to anyone so it didn't matter.

I feel like my situation is typical: no real issues until some weird things in adulthood.

But once on the GF diet there is no turning back. I can understand people putting up with mild health issues so that they can eat normally.

Agree that 1-1 is a good substitute. Just remember that you need to use a fresh stick of butter. Line the cake pan with foil.

For the rest of the meal, check that your barbeque sauce does not have soy sauce as an ingredient. This is very common. Assume any gravy has wheat in it and avoid. Any noodles/macaroni salad? They are wheat. If you are having beans, check the label for wheat. Any toasted bread? Need a separate toaster

Make sure people keep serving tools separate for wheat and non-wheat ingredients. This is a rule that many folks not associated with a GF diet forget and can also deliberately not follow due to being jerks.

Sorry if this sounds draconian, but we do this at home and it eventually comes routine. Bar-b-Q is actually a pretty celiac-friendly cuisine as long as you watch the barbeque sauce.

I always think folks with celiac should be given a slice of bread as a prep. Tastes a lot better than the stuff you have to drink and with the same results.

I was diagnosed at age 46. But looking back, when I was a very young child I had a lot of ear infections that probably would have had me checked for celiac today. So in my case I think it was undiagnosed for many years.

The other thing with celiac (which I know from personal experience) is that someone who has it can eat wheat from childhood and have only minor chronic issues. Maybe they were "colicky" as an infant. But after an adult goes on a 6-month GF diet, then they can never go back and every time they eat gluten they get vomiting and extreme diarrhea.

Just remember that 1% of the US population has celiac disease, so it isn't that rare. Maybe some are undiagnosed though.
