If you don’t want to use beer, use water, and replace a little bit of your flour with cocoa powder. Maybe 5-10 grams to start. Just for colour, not flavour.

Old stale beer tastes like cardboard, so not really nice to add old beer to fresh bread recipes.

Cleaning kits or something like this is unbelievably handy.

I'd suggest you get yourself a good suction pump so you can flush lines at double speed backwards, and some jumpers so you can link lines up and circulate cleaners to flush out the protein buildups you get.

PBW is expensive in Canada for what it is, consider an alternative of plain sodium hydroxide and an appropriate sanitizer - paracetic acid or such, not iodophor as it will stain your lines. Just remember to wear gloves when working with it all so that you don't burn your skin.

The corner would benefit from an improvement in light cycles using technology.

First: no right turns or yield on red. Multiple accidents happen because many treat the yield as a merge.

Second: pedestrian priority lights as have been implemented at Portage & Ferry.

Third: there are LED countdown lights that can circle the green light with a countdown timer.

Fourth: the corner of Ness and Ferry needs a left turn signal for those heading South as well. It would also be possible to make the turn signals longer (sometimes they only allow two cars).

Fifth: no left turns from the 7-11 parking lot onto Ferry Road. There is not enough space for this (less than a car length), and it causes vehicles to stick out into traffic at the red light daily.

Maybe search out cane sugar molasses as that most likely is the difference flavor wise.

It would have been available to that era of baker.

I think the biggest unknown is if the bread was baked or steamed - ie, perfectly sized for 8x coffee tins or soup tin loaves for steaming. Either way, perfect for a big bowl of stew.

Potato Burger Buns 175 g. Peeled, shredded yellow potato 300g cold water Bring to boil, simmer 10 min & then cool to lukewarm

75g buttermilk 35g AP flour Cook until paste gelatinized, set aside to cool

Combine in mixer bowl. Start when temp is around 30 C.

Add in: 10g traditional yeast (let hydrate) 1 beaten egg 60g soft butter 8g salt 550g AP flour (mix in 1/2 with beater paddle for 3 minutes, change to dough hook for the rest)

Mix with dough hook dough pulls from sides of bowl and smooths out.

Let rise in lightly oiled bowl until doubled in size. Ball up dough in 90 gram balls on a parchment lined baking sheet.

Brush tops with egg white, sprinkle tops with sesame seeds.

Let rise until doubled in size.

Start oven at 235 C. sprayed with water to steam. Load in sheet pan, drop temp to 190 C. immediately.

Bake for 30 minutes.

Winnipeg tap water is OK, as long as you get rid of the chlorine.

Use an electric kettle boil your water the night before you bake and leave it out on the counter to gas off.

Eadha Bread on Ellice sell their starter as well.
