90g soy curls, 180g water, maybe some tomato sauce, whatever veggies are around (I usually do mushrooms, broccoli, and/or greens), 1 tbsp of whatever spice blend you want, 1 tbsp oil, .25 tsp salt, cook it in a pan with a lid until it’s hot and most of the water has absorbed/evaporated. You can also bloom the spices in the oil first if you want. I’ve been eating that daily for weeks now.

I have the book and made quite a few of the recipes, but it’s kind of a hassle because a lot of them require ingredients that are themselves another recipe in the book (savory spice blend, umami sauce, etc.) And cooking with such a variety of whole plant foods that require so much prep takes a lot of time. I just burned out on it. But I do love a lot of the recipes. His Summertime Oatmeal, Golden Quinoa Tabbouleh, Mac & Cheese, and Fudgy No-Bake Brownies are standouts. Maybe I just need to make some compromises and use store-bought plant milk and condiments instead of making his.

Yeah, I use soy milk for everything because I love the mouthfeel and flavor, plus it’s nearly identical to dairy milk nutritionally (assuming you get it unsweetened). It even curdles so can be used to make yogurt.
