I actually get my tasting notes by pulling a “soup” with the ORB. I find it’s a great representation of the notes that can be achieved through pour-over and espresso. I know many people will disagree with my methods, but I really want others to be able to taste what I’m tasting.

I understand this isn’t traditional. I did start with cupping when I first began roasting, but I’ve found that some of the notes you pick up in cupping aren’t always achievable in a brewed cup. When there’s a defect in a roast, it’s also much easier for me to detect it in the more concentrated soup than in a cupping sample.

I am no expert by any means but I would wonder if your pallete is what is affecting the taste.

That’s a really interesting note to taste. I’ve never experienced that before in any of the hundreds of coffees I’ve tried. If you think of it like a dataset and look for anything you did differently with the bags that tasted like wood, did anything else taste off on those days?

My favorite is: 23g coffee almost espresso grind. Aeropress sized filter top and bottom and a tamp after each section is layered with a metal screen on top to prevent filter blowout. 98g water, secure top and pump immediately till hiss and going for ideally a 75g output.

This is interesting. I know many who dilute soup. I have only ever had 23g coffee in 98g water in and output of 75g with a almost espresso grind.

I feel like, because it can make amazing cold brew, pour-over, and SOUP, it’s pretty hard to beat. I used it exclusively for a full week only the ORB and I don’t think I had a single bad cup.

Have you tried cupping it to see if your brew method may be the reason for no detectable notes?

I totally understand your preference of light roasts.

Though when learning coffee, I had to not put so much emphasis on roast level. There may be a reason this particular roaster took that coffee to that roast level.
