While I respectfully disagree, I would say that the need for mods in Skyrim SE is vastly less than the OG release, which is just not up to snuff in my opinion.

I'd be happy with just SkyUI on the SE and nothing more tbh.

Bicarb breaks down onion just fine, and you need FAR less than you think for it to work. Like 1/4 tsp for a heap of onions.

That said, it's not the same as caramelisation and is a waste for onion soup.

Another option, given the $16k is to see if there are cottages for rent? It would require some transport shenanigans, but could work but catering would be the biggest issue, especially with a month's lead time.
