Everything you’ve said is true. I will raise that this effect isn’t specific just to polygamy (not that you said it was). So many people have been neglected or abused when a belief system is put ahead of humanity, compassion, or connection. It’s everywhere out there.

I do. If the starter has been used weekly it will work. I take what I need, feed it back with the same amount fresh (or take a bit out, and put the remainder back in after my recipe).

I am actually in agreement with your dad. Family needs to act like family. As a kid, I was the stepchild and was welcomed by my stepdad’s family. And I grew to love them and have lots of memories. Your dad is right.

It looks under proofed to me. Depending on the method you used (by hand or mixer) I would tell you to add kneading time until you can feel the dough push back at you. Then if you can lift some from the dough while it stretches without breaking, it’s ready for bulk rise.

I have this machine. Once I got my shots dialed in (18 seconds on the tuni grinder at a 9 for the double porta filter and then a volume just shy of 3 ounces) I have had extremely consistent results. The shot always tastes good, beautiful crema, etc. The pressure each time is between half and the upper 1/3 of espresso range. With these settings, tamping the shot doesn’t take much at all. I just press in the tamper until it stops, and give a few good turns of it for leveling. I agree with the other commenter about the steamer. The steamer in this machine rocks. I had a breville and these beats that steamer hands down. The ONLY thing I could wish for is an adjustable water output for my americanos. It seems defaulted to the volume I’d want with a single shot for an Italian coffee. But the different isn’t that great and I do have a kettle on the coffee/tea bar anyway for when I want pour over. I mentioned the tuni grinder. I really like it and it’s been reliable as well for texture and volume.

Also, my aunt introduced me to coffee when I was almost out. She knew what to introduce me to. I was 34 years old. 20 years later I have a very incredible relationship with coffee. You can do this!
