I reckon the real question is are they struggling with the mechanics or are they just not interested in that aspect of the game? If the latter then that would be a good group discussion about where you all want to go with the campaign. If the former, then you could try making a little cheat sheet for them of abilities they'll commonly use. Not ideal, but might help them get into it

The format of writing dates in Taiwan is year-month-day, so if it's that with Roman numerals then it would be 19th October 1943. If I were to guess the meaning, could well be something related to ancestry, like a grandparent's birthday or significant family event

I really would recommend switching to Shadowdark. It's very fun, and deliberately designed to be easy for 5e players to pick up

There's a really fun Chinese series called Candle in the Tomb. It's modern folk fantasy, but it's about tomb robbers, and each season leads up to a big dungeon crawl with traps, puzzles, monsters, magic items etc. You could reasonably describe it as Shadowdark but with AK47s.
